Frying-Pan
In a medium pot, bring 1 1?2 cups water to a boil. Stir in the rice, cover and reduce the heat to low. Simmer for 15 minutes until all the water is absorbed. Keep pot covered and let the rice absorb the water off the heat. Fluff the finished rice with a fork.
Heat a frying pan over a high heat. Add a drizzle of oil to the pan. Add the stir fry veg to the pan and sauté for 4 minutes. Add the tofu to the pan and cook for a further 2 minutes. Add the sweet and sour sauce and the pineapple and mix to coat the ingredients in sauce. Cook for an additional minute to warm the sauce through.
Tip! Cut the tofu into smaller chunks if they are large pieces.
Divide the rice between serving plates and top with the sweet and sour tofu. Enjoy!
