This recipe is fast, light and fresh. Bursting with flavour from the sesame crust on the tuna, creamy Japanese mayo and the smacked cucumber inspired salad. Smacked cucumber may sound a bit unusual but it is a classic Chinese side dish made by smacking the cucumber with a knife or rolling pin to lightly bruise the flesh so that it absorbs all of the delicious dressing, chilli and garlic. There are many variations on this salad and we have chosen a simple, light version to pair well with the tuna.

Place sesame seeds on a plate and add a sprinkle of salt and pepper, press tuna steaks into the sesame to coat well all over.
With the flat side of a chef's knife or a rolling pin smack the cucumber a few times. Slice cucumber into rounds. Mince garlic. Finely chop red chilli, discarding seeds for less heat. Finely slice spring onion. Finely slice radish.
Tip! Smacking the cucumber helps to break down some of the flesh so the dressing flavours it more deeply.
Heat a pan over high heat, you want the pan to be quite hot. Add a small drizzle of oil and swirl to coat the pan. Carefully lay the tuna in the pan and sear for 30 seconds on each side for medium rare. Place on a plate to rest. (SEE TIP)
Tip! Tuna should be served quite rare as it can dry out when fully cooked. But if you prefer it cooked through that's ok just cook for 45 seconds to 1 minute each side and flake over the salad.
In a jar or bowl combine soy/rice vinegar, garlic, sesame oil, chilli and shake or mix to combine. Combine cucumber and dressing in a bowl and mix well. Toss the greens, radish and spring onion in another bowl.
Tip! Canola or peanut oil work well for a neutral flavour. You can combine the salad dressing, cucumber and other salad indgredients together if you like but be mindful the lettuce will go a bit limp so do it at the last minute.
Pile plates with salad, add a sesame crusted tuna steak and a handful of the delicious cucumber. Spoon over a dollop of Japanese mayo and enjoy.
