Deepsided Pan
In a pot, bring 11⁄2 cups water to a boil. Stir in the basmati rice, cover with a lid and reduce the heat to low. Simmer for 15 minutes until all the water is absorbed. Cover the pot and let the rice absorb any remaining water off the heat. Fluff the finished rice with a fork.
In a deepsided pan on medium heat. Add lamb rogan josh and heat through until piping hot, about 3 minutes. Stir in spinach and cook for 1 minute. Dice cucumber. Pick coriander and mint leaves, discarding stems.
Tip! You can also microwave the lamb on high for 4 minutes, stirring and adding in the spinach after 2 minutes. Make sure it is piping hot.
Heat pappadums in the microwave on high heat for 30 seconds - 1 minute. Mix together cucumber, yoghurt and herbs to make the raita, season with salt.
Divide rice and lamb rogan josh between bowls. Serve with raita and pappadums on the side. Enjoy!
