First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

Step 1

1 Prepare Ingredients

Peel and dice garlic and ginger. Cut ends of broccolini. Cut lime into wedges. Pick mint leaves and chop, discarding stems. Remove ends of pak choy. Slice red chilli. Dice plum. Mix diced plum and 1/2 mint together, season wtih salt and set aside for step 5.

Step 2

2 Cook Chicken

Coat chicken in 1-2 tablespoons of plum sauce mix (saving the rest for step 4). Heat a frying pan on medium high heat with a drizzle of oil. Add chicken and cook for 3-4 minutes each side. Flip the chicken a few times to prevent burning.

Step 3

3 Add Veg

Remove the chicken from the pan and add green veg, cook for 2-3 minutes. Remove from the pan and keep warm. To the same pan add ginger and garlic, cook for 30 seconds. Add plum sauce mix and a squeeze of lime juice (to taste), stir and add chicken back to the pan. Cook until chicken is warmed through, about 1 minute.

Step 4

4 You Plate It!

Slice chicken. Divide rice, green veg and chicken between plates. Drizzle sauce from the pan over the chicken. Top chicken with plum salsa. Garnish with chilli, remaining lime and mint. Enjoy!
