First Things First

Step 1

1 Prepare Eggplant

Preheat oven to 200°C. Heat a grill pan on medium heat. Trim eggplant and slice on a slight angle into 1cm slices. Drizzle pan with 1 Tbsp of olive oil and grill eggplant slices until golden on both sides, about 6-8 minutes. Set aside to cool and season with salt and pepper.

Tip! We have supplied local baby eggplant for this recipe - so it may look a little different to the picture. Either way, it will still taste great.

Step 2

2 Assemble & Cook Pizza

Place pizza base on lined tray. Spread with pizza sauce, sprinkle over grated pizza cheese. Arrange the eggplant pieces over the base, crumble the ricotta over the top. Sprinkle the oregano and chilli flakes (to taste) over the top. Bake pizza for 12-15 minutes or until cheese has melted and the base is crisp.

Tip! If you have a pizza stone you can use it for the ultimate crispy base.

Step 3

3 Dress Rocket

Add rocket to a bowl and toss lightly with the balsamic dressing.

Step 4

4 You Plate It

Make the gremolata; zest the lemon. Pick parsley leaves and finely chop. Combine well with lemon zest in a small bowl. Cut the pizza into slices, sprinkle with the gremolata and serve with the rocket side salad (or the rocket on top if you wish).
