Grill Pan
Preheat oven to 210°C. Heat a grill pan on medium-high heat, spray or brush the pan with a little oil. Cut the pineapple slices in half and brush both sides with chilli jam (keeping some for step 4). Place the pineapple slices onto the grill and cook for 1 minute each side.
Tip! If using a pizza stone, place it in the oven to heat up.
Peel and slice red onion. Evenly spread pizza & pasta sauce onto the pizza base. Sprinkle mozzarella over the top.
Tip! When swapping the chef selected protein adjust the cooking times and method to ensure your protein is properly cooked and therefore safe to eat.
Add the prosciutto slices to the pizza, roughly tearing as you add. Top with caramelised pineapple slices and red onion (to taste). Place the pizza in the oven (on a lined baking tray, or directly onto the pizza stone if using) and cook for 10-12 minutes until the base is browned and cooked to your liking.
Lightly dress the rocket with a little olive oil. Top the hot pizza with dressed rocket and remaining chilli jam. Slice and serve at once!
Tip! You can serve the rocket separately if you wish - but we think the rocket on the top of a hot pizza is the perfect combo!
