Oven Proof Tray
Pizza Stone (Optional)
Preheat oven to 240°C. Place pizza base on an oven tray. Spread pizza sauce over base, followed by the pizza cheese.
Tip! If using a pizza stone pop it in the oven now to preheat.
Slice haloumi into thin slices. Lay the slices of haloumi over the pizza. Dot the caramelised onion evenly over pizza (use as much or as little as you like). Sprinkle pine nuts over the top. Bake for 10-12 minutes or until cheese is bubbly and golden and base is crisp.
Tip! If you like your haloumi charred you can fry it in a dry pan for a minute on each side but this step is not essential.
Gently dress the rocket in the balsamic dressing just before taking the pizza out of the oven.
Allow the pizza to cool for a few minutes, slice into pieces, top with dressed rocket and serve (try not to inhale it all at once!)
