This beef, broccoli and udon noodle stir-fry is a quick and easy main meal  Using beef mince means it’s cooked in no time, and the broccoli and choy sum are added and quickly stir-fried to add pops of bright green. Udon noodles are the perfect accompaniment. A delicious dinner in 25 minutes max.

First Things First

Step 1

1 Prepare Ingredients

Boil a kettle of water. Peel and mince garlic and ginger. Julienne or slice carrot (peeling is optional). Roughly chop choy sum leaves, discarding stems. Cut broccoli into florets. Slice spring onion, keeping white and green parts separate. Slice chilli.

Step 2

2 Prepare Noodles

In a large bowl add noodles and cover with boiling water. After 2 minutes separate noodles with a fork and cook for a further 3-4 minutes.

3 Cook Mince and Broccoli

Heat a deep sided pan on medium high heat with a drizzle of oil. Add white parts of spring onion, garlic and ginger. Cook for about 30 seconds. Add mince and brown, about 2-3 minutes. Add broccoli, cook for 2 minutes.

Step 4

4 Add Remaining Veg

Add carrot and choy sum, cook for 1-2 minutes. Add noodles, sesame oil and sauce mix, cook for 1-2 minutes or until the noodles are warmed through and coated in sauce.

Step 5

5 You Plate It!

Divide noodles between bowls. Garnish with chilli and green parts of spring onion. Enjoy!
