Boil a kettle of water. Peel and mince garlic and ginger. Julienne or slice carrot (peeling is optional). Roughly chop choy sum leaves, discarding stems. Cut broccoli into florets. Slice spring onion, keeping white and green parts separate. Slice chilli.
In a large bowl add noodles and cover with boiling water. After 2 minutes separate noodles with a fork and cook for a further 3-4 minutes.
Heat a deep sided pan on medium high heat with a drizzle of oil. Add white parts of spring onion, garlic and ginger. Cook for about 30 seconds. Add mince and brown, about 2-3 minutes. Add broccoli, cook for 2 minutes.
Add carrot and choy sum, cook for 1-2 minutes. Add noodles, sesame oil and sauce mix, cook for 1-2 minutes or until the noodles are warmed through and coated in sauce.
Divide noodles between bowls. Garnish with chilli and green parts of spring onion. Enjoy!
