Thinly slice cos leaf and cut grape tomatoes in half. Heat a pan over medium heat, add the pulled lamb and stir until piping hot. Season with salt and pepper. Keep warm.
Tip! Alternatively you can warm the pulled lamb in the microwave until piping hot.
In a small frypan, fry 1 egg per person if desired. Season with salt and pepper.
Preheat a grill pan or frying pan over medium heat. Add the flatbread and heat for 1-2 minutes on each side until warmed through, they should be slightly brown and soft.
Tip! Be careful not to over cook the souvlaki, it will harden and be difficult to wrap.
Spread garlic aioli onto each flatbread. Top with cos leaf, pulled lamb, cheese, tomatoes and egg. Roll into a kebab like parcel for easy eating. Enjoy!
